Ils sont riches en prot\u00e9ines, en phosphore, en fer, en vitamine D et en acides amin\u00e9s essentiels, ils sont hypocaloriques, presque d\u00e9pourvus de graisses et riches en fibres nutritionnelles. La sensibilisation \u00e0 un r\u00e9gime alimentaire \u00e9quilibr\u00e9 et l&#8217;augmentation de la consommation d&#8217;aliments plus sains dans le monde entier sont les principaux facteurs de croissance du march\u00e9 mondial des champignons. Cela vaut \u00e9galement pour le march\u00e9 canadien. Cependant, lors de la r\u00e9colte des champignons, une quantit\u00e9 importante de d\u00e9chets de champignons est g\u00e9n\u00e9r\u00e9e et utilis\u00e9e comme compost. \u00c9tant donn\u00e9 que toutes les parties du champignon contiennent des nutriments pr\u00e9cieux, il est souhaitable de r\u00e9cup\u00e9rer ces nutriments sous une forme ou une autre. L&#8217;une des nombreuses techniques disponibles pour extraire les nutriments des aliments est la fermentation, qui a \u00e9t\u00e9 utilis\u00e9e pour permettre des changements biochimiques par l&#8217;interm\u00e9diaire de micro-organismes et de leurs sous-produits\/enzymes.<\/p>\n<p>Par exemple, dans le cas des champignons shiitake, il a \u00e9t\u00e9 d\u00e9montr\u00e9 que de nombreuses substances contribuent \u00e0 la saveur du champignon, y compris certains acides amin\u00e9s. Le terme Umami est utilis\u00e9 pour d\u00e9crire ces saveurs. N\u00e9anmoins, avec la consommation de glutamate monosodique, certaines personnes peuvent pr\u00e9senter diff\u00e9rents degr\u00e9s de sensibilit\u00e9 qui peuvent inclure des sympt\u00f4mes asthmatiques, des maux de t\u00eate, etc. L&#8217;une des raisons de ce ph\u00e9nom\u00e8ne peut \u00eatre que le glutamate contenu dans le glutamate monosodique est chimiquement similaire \u00e0 un neurotransmetteur naturel.<\/p>\n<p>In the food industry, MSG is used as a flavor enhancer for its widespread contribution of the umami taste. It is used to intensify the meatiness and savory aroma and taste of some processed meats, soups, stews and many other foods with its principal application in foods for flavor enhancement. Nonetheless, with the consumption of MSG, some individuals may display different degrees of sensitivity that may include asthmatic symptoms, headaches etc. One of the reasons for this occurrence may be that the glutamate in MSG is chemically similar to a natural neurotransmitter.<\/p>\n<p>Dans le cadre du projet actuel, nous utilisons les d\u00e9chets de la culture des champignons, ce qui g\u00e9n\u00e9rera des revenus suppl\u00e9mentaires pour les exploitations agricoles en cr\u00e9ant une alternative naturelle innovante \u00e0 valeur ajout\u00e9e au glutamate monosodique.<\/p>\n<p>[\/et_pb_text][\/et_pb_column][et_pb_column type=&#8221;1_4&#8243;
