Elles repr\u00e9sentent 85 % du total des r\u00e9sidus des op\u00e9rations de brassage et pr\u00e8s de 30 % du grain d&#8217;orge malt\u00e9 de d\u00e9part, qui finit principalement dans les d\u00e9charges ou est vendu \u00e0 bas prix comme aliment pour animaux. La valorisation et l&#8217;utilisation de ce pr\u00e9cieux d\u00e9chet alimentaire pr\u00e9sentent donc un grand int\u00e9r\u00eat en termes de durabilit\u00e9 et d&#8217;augmentation du recyclage des flux de d\u00e9chets de transformation afin de r\u00e9duire le gaspillage alimentaire et de soutenir la circularit\u00e9 des syst\u00e8mes agroalimentaires.\u00a0<\/p>\n<p>En raison de son faible prix, de sa grande disponibilit\u00e9 tout au long de l&#8217;ann\u00e9e et de sa teneur \u00e9lev\u00e9e en fibres (50 % p\/p), en prot\u00e9ines (jusqu&#8217;\u00e0 30 % p\/p) et en compos\u00e9s ph\u00e9noliques, les dr\u00eaches d&#8217;orge sont une ressource inexploit\u00e9e prometteuse et peu co\u00fbteuse pour l&#8217;alimentation humaine, qui pourrait avoir des effets b\u00e9n\u00e9fiques sur la sant\u00e9. Cependant, l&#8217;utilisation des dr\u00eaches comme ingr\u00e9dient alimentaire reste limit\u00e9e en raison de sa structure cellulaire lignocellulosique complexe, de ses agr\u00e9gats prot\u00e9iques peu solubles et des faibles performances technologiques qui en d\u00e9coulent. L&#8217;utilisation efficace des dr\u00eaches pour la valorisation n\u00e9cessite des techniques de pr\u00e9traitement qui peuvent le pr\u00e9server, mais aussi perturber les prot\u00e9ines naturelles et les polysaccharides ordonn\u00e9s pour une fonctionnalisation et une solubilisation efficaces. Dans ce contexte, les technologies avanc\u00e9es de pr\u00e9traitement et de traitement, telles que le champ \u00e9lectrique puls\u00e9 (PEF), les micro-ondes (MW), le chauffage ohmique (OH), les ultrasons (US) et les modifications de l&#8217;extraction assist\u00e9e par enzyme (EAE) ou une combinaison de celles-ci, ont \u00e9t\u00e9 identifi\u00e9es comme des processus polyvalents, propres et \u00e9co-efficaces pour augmenter l&#8217;extraction et la fonctionnalisation des composants pr\u00e9cieux des sous-produits et am\u00e9liorer leurs propri\u00e9t\u00e9s nutritionnelles, techno et bio-fonctionnelles et sensorielles. Sur la base de ce qui pr\u00e9c\u00e8de, cette recherche vise \u00e0 appliquer des technologies de pointe \u00e9volutives pour le pr\u00e9traitement des dr\u00eaches d&#8217;orge afin de permettre la pr\u00e9paration int\u00e9gr\u00e9e d&#8217;ingr\u00e9dients enrichis en prot\u00e9ines et en fibres d\u00e9riv\u00e9es des dr\u00eaches d&#8217;orge, s\u00fbrs et \u00e0 valeur ajout\u00e9e, avec des attributs nutritionnels, techno et bio-fonctionnels et sensoriels am\u00e9lior\u00e9s.<\/p>\n<p>[\/et_pb_text][\/et_pb_column][et_pb_column type=&#8221;1_4&#8243;
